Watermelon Coconut Lime Popsicles

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1/2 cup full-fat coconut milk canned
  • 2 tablespoons fresh lime juice
  • 1-2 tablespoons honey or maple syrup optional, to taste

Equipment

  • Blender
  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, and lime juice in a blender. Blend until smooth.
  2. Taste the mixture. If you prefer a sweeter popsicle, add honey or maple syrup and blend again briefly.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  5. To unmold, run the popsicle molds under warm water for a few seconds.

Notes

For extra flavor, you can add a few mint leaves to the blender with the watermelon.
