Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups milk dairy or non-dairy
  • 2 tablespoons maple syrup or to taste
  • 1 teaspoon vanilla extract
For the Parfait Layers
  • 2 cups watermelon cubed
  • 1 cup berries e.g. blueberries, raspberries
  • 1 cup melon e.g. cantaloupe, honeydew, cubed

Equipment

  • Measuring spoons
  • Small bowls
  • Serving glasses

Method
 

  1. Make the chia pudding: In a bowl, whisk together chia seeds, milk, maple syrup, and vanilla extract. Let sit for 5 minutes, then whisk again to break up any clumps.
  2. Cover the bowl and refrigerate for at least 2 hours, or until thickened.
  3. Prepare the fruit: Cube the watermelon and melon. Wash the berries.
  4. Assemble the parfaits: In serving glasses, layer the chia pudding with cubed watermelon, melon, and berries.
  5. Repeat the layers until the glasses are full. Serve immediately.

Notes

You can blend the watermelon and melon separately to create a smoother layer if desired.
