Ingredients

For the Base
  • 1 large Watermelon seedless, cut into 1-inch thick rounds
For the Topping
  • 1 cup Greek yogurt plain, full-fat
  • 2 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Mixed berries fresh or frozen (strawberries, blueberries, raspberries)
  • 1/4 cup Chopped nuts optional (almonds, walnuts)
  • 2 tablespoons Shredded coconut unsweetened, optional

Equipment

  • Knife
  • Cutting board
  • Large serving platter

Method

  1. Prepare the watermelon base. Cut the watermelon into rounds, about 1-inch thick. Place one round on a large serving platter.
  2. Make the yogurt topping. In a small bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth.
  3. Spread the yogurt mixture evenly over the watermelon round, leaving a small border.
  4. Add the fruit toppings. Arrange the mixed berries over the yogurt layer. Sprinkle with chopped nuts and shredded coconut, if using.
  5. Serve immediately. Slice the fruit pizza into wedges and enjoy.

Notes

For best results, use a seedless watermelon. You can substitute other fruits like kiwi, mango, or peaches for the berries.
