- In a small bowl, combine the shredded manchego cheese, onion powder, and 1 tablespoon of the softened butter. Mix well.
- Spread mayonnaise on one side of each slice of sourdough bread. This will help create a golden-brown crust.
- On the un-mayonnaised side of two bread slices, layer the brie cheese, followed by the shredded cheddar, Monterey jack, and gruyere cheeses. Top with the manchego cheese mixture.
- Place the remaining two bread slices on top, mayonnaise-side out.
- Heat a large frying pan over medium heat. Add the remaining 5 tablespoons of softened butter to the pan and let it melt.
- Carefully place the sandwiches in the hot pan. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Remove the sandwiches from the pan and let them rest for about 5 minutes before slicing and serving. This allows the cheese to set slightly.
