Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter, softened divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese, finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese, rind removed
  • 1/2 cup sharp white cheddar, shredded
  • 1/2 cup Monterey jack, shredded
  • 1/2 cup gruyere, shredded

Method
 

  1. In a small bowl, combine the shredded manchego cheese, onion powder, and 1 tablespoon of the softened butter. Mix well.
  2. Spread mayonnaise on one side of each slice of sourdough bread. This will help create a golden-brown crust.
  3. On the un-mayonnaised side of two bread slices, layer the brie cheese, followed by the shredded cheddar, Monterey jack, and gruyere cheeses. Top with the manchego cheese mixture.
  4. Place the remaining two bread slices on top, mayonnaise-side out.
  5. Heat a large frying pan over medium heat. Add the remaining 5 tablespoons of softened butter to the pan and let it melt.
  6. Carefully place the sandwiches in the hot pan. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  7. Remove the sandwiches from the pan and let them rest for about 5 minutes before slicing and serving. This allows the cheese to set slightly.
