Method
- Toast the english muffin halves.
- Heat olive oil or butter in a skillet over medium heat.
- Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
- Place the ham slices on top of the cooked eggs and cook for 1 minute.
- Top the ham with shredded cheese and chives. Cover the skillet for 1-2 minutes, or until the cheese is melted.
- Assemble the sandwich: Place the egg, ham, and cheese mixture onto the bottom half of the toasted english muffin. Top with the other half of the muffin.
Notes
To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan simultaneously.
