Ingredients
  

For the Breakfast Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham black forest or any kind
  • 1/3 cup finely shredded cheese Mexican cheese recommended
  • 1 tsp chives finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Toaster
  • Skillet

Method
 

  1. Toast the english muffin halves.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
  4. Place the ham slices on top of the cooked eggs and cook for 1 minute.
  5. Top the ham with shredded cheese and chives. Cover the skillet for 1-2 minutes, or until the cheese is melted.
  6. Assemble the sandwich: Place the egg, ham, and cheese mixture onto the bottom half of the toasted english muffin. Top with the other half of the muffin.

Notes

To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan simultaneously.
