Taco Tuesday Chicken Tacos

Ingredients
  

For the Chicken
  • 3 Tbsp. extra-virgin olive oil
  • 4 boneless, skinless chicken breasts cut into 1" strips
  • 1 to taste Kosher salt
  • 1 to taste Freshly ground black pepper
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne
  • 1/4 tsp. paprika
For Serving
  • 8 corn tortillas warmed
  • 1 Sour cream for serving
  • 1 red onion thinly sliced, for serving
  • 1 tomatoes finely chopped, for serving
  • 1 Monterey Jack cheese shredded, for serving
  • 1 avocados finely chopped, for serving
  • 1 fresh cilantro finely chopped, for serving
  • 1 lime wedges for serving

Method
 

  1. Heat oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook, stirring occasionally, until golden brown, about 6 minutes.
  2. Add chili powder, cumin, garlic powder, cayenne, and paprika. Cook, stirring and adding more oil if the mixture is too dry, until the chicken is coated, about 1 minute more.
  3. Divide the chicken among the warmed tortillas. Top with your desired toppings.

Notes

This recipe is designed for meal prep. You can cook the chicken ahead of time and store it in the refrigerator. Reheat gently before serving or enjoy cold.
