Method
 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool, then cut the kernels off the cobs.
  3. While the corn cools, prepare the dressing. Combine the avocado, lime juice, olive oil, garlic, salt, and pepper in a blender. Blend until smooth and creamy.
  4. In a large bowl, combine the chopped romaine lettuce, grilled corn kernels, cherry tomatoes, sliced red onion, and chopped cilantro.
  5. Pour the avocado lime dressing over the salad and toss gently to combine.
  6. Serve immediately.

Notes

You can add grilled chicken or shrimp for extra protein. For a spicier dressing, add a pinch of chili powder.
