Spicy Korean Ramen with Grilled Beef & Creamy Sauce

This recipe combines tender grilled beef with spicy Korean ramen, all brought together by a rich, creamy sauce. It's a restaurant-quality dish you can make at home.

Ingredients
  

For the Grilled Beef
  • 300 g ribeye or sirloin steak
  • 2 tbsp soy sauce
  • 1 tbsp gochujang
  • 1 tbsp sesame oil
  • 1 tsp brown sugar
  • 2 cloves garlic, minced
  • 1/2 tsp ground black pepper
For the Ramen
  • 2 packs instant ramen noodles discard seasoning packet
  • 2 cups chicken or beef broth
  • 1 tbsp gochugaru
  • 1 tsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • to taste salt
For the Creamy Sauce
  • 3 tbsp mayonnaise Kewpie preferred
  • 1 tbsp sriracha or Korean chili sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • pinch sugar optional
Garnishes
  • 2 tbsp chopped green onions
  • 1 tsp toasted black sesame seeds
  • optional extra chili oil or gochugaru

Method
 

  1. In a bowl, mix soy sauce, gochujang, sesame oil, brown sugar, garlic, and pepper. Add beef and marinate for 30 minutes.
  2. In another small bowl, mix all creamy sauce ingredients until smooth. Chill until ready to use.
  3. In a pot, simmer broth. Add gochugaru, soy sauce, vinegar, sesame oil, and salt. Cook ramen noodles until al dente (about 3 minutes). Remove from heat.
  4. Heat grill pan or skillet over high heat. Sear beef 2–3 minutes per side until caramelized. Let rest, then slice against the grain.
  5. Assemble bowls: add noodles and broth, top with creamy sauce, grilled beef, green onions, sesame seeds, and extra spice if desired.

This recipe was inspired by a memorable trip to Seoul, where the vibrant flavors of Korean ramen first captivated the author. After much experimentation, the perfect balance of grilled beef and creamy sauce was achieved, creating a dish that evokes the bustling street markets of Korea.
