Ingredients
  

For the Wraps
  • 1 pound grilled chicken breast cut into strips
  • 6 whole wheat tortillas
  • as needed Romaine lettuce leaves
  • 15 ounces black beans one can, drained and rinsed
  • 8 ounces corn one can, drained well
  • 3/4 cup pico de gallo
  • 1 cup shredded cheddar cheese lite or fat free
  • 1/3 cup mayonnaise lite

Method
 

  1. Cut the grilled chicken into strips and start assembling your wraps.
  2. Lay a tortilla on a clean chopping board. Add one or two lettuce leaves, 2 tbsp black beans, 1 tbsp corn, 2 tbsp pico de gallo, and top with some chicken.
  3. Drizzle with a spoonful of mayonnaise and sprinkle with shredded cheddar.
  4. Roll it up, neat and tight, then repeat with the remaining tortillas.
  5. Just before serving, cut the tortillas in half and enjoy!

Notes

You can use lite mayo or Miracle Whip. Greek yogurt can be used in place of mayo. Use carb or whole wheat tortilla wraps. Use canned corn, or boil your own fresh corn. Use the shredded cheese of your choice, including fat-free versions. Southwest dressing can be used in place of mayo or yogurt.
