Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
For the Peaches
  • 3 large peaches pitted and sliced
  • 1 tbsp granulated sugar
  • 0.5 tsp cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 10-inch cast iron skillet.
  2. In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Spread the batter evenly into the prepared skillet.
  7. Arrange the sliced peaches over the batter. In a small bowl, toss the peaches with 1 tablespoon of sugar and the cinnamon.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the skillet for 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
