For the Casserole
  • 1 pound sliced bacon diced
  • 1 medium sweet onion chopped
  • 6 large eggs lightly beaten
  • 4 cups frozen shredded hash brown potatoes thawed
  • 2 cups cheddar cheese shredded
  • 1-1/2 cups cottage cheese 4%
  • 1-1/4 cups Swiss cheese shredded

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 13x9-inch baking dish.
  2. In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess grease.
  3. In a large bowl, combine the lightly beaten eggs, thawed hash browns, shredded cheddar cheese, cottage cheese, and shredded Swiss cheese. Stir in the cooked bacon and onion mixture.
  4. Transfer the mixture to the prepared baking dish.
  5. Bake uncovered for 35-40 minutes, or until a knife inserted into the center comes out clean.
  6. Let the casserole stand for 10 minutes before cutting and serving.
