Red White and Blue Icebox Cake

A simple no-bake dessert perfect for summer holidays.

Ingredients
  

For the Cake
  • 1 package graham crackers about 14-16 full sheets
  • 2 cups cold heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 1 container whipped topping like Cool Whip, thawed
  • 1/2 cup fresh blueberries
  • 1/2 cup sliced fresh strawberries

Equipment

  • 9x13-inch baking dish
  • Electric mixer

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a layer of graham crackers. You may need to break some to fit.
  2. In a large bowl, beat the cold heavy cream with an electric mixer until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Add another layer of graham crackers on top of the whipped cream.
  6. Spread the remaining whipped cream mixture over the second layer of graham crackers.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften.
  8. Before serving, spread the thawed whipped topping over the chilled cake.
  9. Decorate the top with fresh blueberries and sliced strawberries to create a red, white, and blue pattern.

Notes

For best results, ensure your heavy cream is very cold. You can also add a drop of blue food coloring to a portion of the whipped cream for a more vibrant blue layer if desired.
