Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 3 tablespoons mayonnaise
  • 1 1/2 cups shredded havarti cheese
  • 1/2 cup chopped dill pickles
  • 3 tablespoons softened butter divided

Method
 

  1. Place bread on a work surface and spread mayonnaise evenly on one side of each bread slice.
  2. Combine cheese and pickles in a bowl until evenly mixed. Divide the cheese mixture evenly among 4 bread slices. Place the remaining 4 bread slices, mayonnaise side down, on top of the cheese and pickle mixture.
  3. Spread half of the softened butter evenly over the tops of the sandwiches. Heat a large skillet over medium heat.
  4. Place sandwiches, buttered side down, in the skillet. Spread the remaining butter evenly over the tops of the sandwiches. Cook until golden brown and toasted on the bottom side, about 4 minutes. Flip and cook until the cheese is melted through and the bread is toasted on both sides, about 4 minutes more. Serve immediately.

Notes

This recipe is a base for many variations. Feel free to add other ingredients like cooked eggs, different cheeses, or other vegetables to suit your taste.
