Ingredients
  

For the Brie
  • 1 wheel Brie cheese 8-16 ounces
  • 1/4 cup Pecans chopped
  • 2 tablespoons Honey
For the Peaches
  • 2 Peaches ripe, pitted and sliced
  • 1 tablespoon Butter
  • 1 tablespoon Brown sugar
  • 1/4 teaspoon Cinnamon
For Serving
  • 1 bag Baguette sliced

Equipment

  • Baking sheet
  • small skillet

Method
 

  1. Preheat your oven to 375°F (190°C). Place the brie on a baking sheet.
  2. In a small skillet, toast the chopped pecans over medium heat for 3-5 minutes until fragrant. Remove from heat and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the sliced peaches, brown sugar, and cinnamon. Cook for 5-7 minutes, stirring occasionally, until the peaches are softened.
  4. Arrange the cooked peaches around the brie on the baking sheet. Drizzle the honey over the brie.
  5. Bake for 10-12 minutes, or until the brie is soft and melty.
  6. Remove from the oven, sprinkle with the toasted pecans, and serve immediately with sliced baguette.

Notes

You can also add a sprig of rosemary for garnish. If you don't have fresh peaches, you can use canned or frozen peaches, drained well.
