For the Salad
  • 2 balls burrata cheese drained
  • 3 ripe peaches pitted and sliced
  • 1/2 cup fresh basil leaves torn
  • 1/4 cup toasted pine nuts
For the Vinaigrette
  • 3 tbsp olive oil extra virgin
  • 1 tbsp balsamic glaze
  • 1 tsp honey
  • 1 pinch salt
  • 1 pinch black pepper freshly ground

Method
 

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, balsamic glaze, honey, salt, and pepper. Set aside.
  2. Arrange the burrata balls on a serving platter. Distribute the sliced peaches and torn basil leaves around the burrata.
  3. Drizzle the prepared vinaigrette evenly over the platter.
  4. Sprinkle the toasted pine nuts over the salad.
  5. Chill for 10 minutes before serving to allow flavors to meld.

Notes

Serve immediately after chilling. This salad pairs well with crusty bread.
