Peach Brown Sugar Cobbler

Ingredients
  

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 1/2 cup brown sugar packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
For the Topping
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold butter cut into small pieces
  • 1/2 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup brown sugar, 2 tablespoons flour, and lemon juice. Toss to coat the peaches evenly.
  3. Pour the peach mixture into a 9x13 inch baking dish.
  4. In a separate bowl, whisk together 1 cup flour, 1/2 cup brown sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir until just combined. Do not overmix.
  7. Spoon the topping mixture evenly over the peaches.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream.
