Ingredients

For the Chicken and Rice
  • 1 tablespoon Olive oil
  • 1 pound Boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1.5 cups Uncooked white rice rinsed
  • 3 cups Chicken broth
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
For the Honey BBQ Sauce
  • 0.5 cup BBQ sauce
  • 2 tablespoons Honey
  • 1 tablespoon Worcestershire sauce
For Garnish (Optional)
  • 2 tablespoons Fresh parsley chopped
  • 2 tablespoons Green onions sliced

Equipment

  • Large oven-safe skillet

Method

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  3. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the rinsed rice, chicken broth, smoked paprika, salt, and pepper. Bring to a boil.
  6. Return the browned chicken to the skillet. Stir to combine.
  7. In a small bowl, whisk together the BBQ sauce, honey, and Worcestershire sauce. Pour this sauce evenly over the chicken and rice mixture.
  8. Cover the skillet tightly with foil and transfer it to the preheated oven. Bake for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  9. Remove the foil and bake for an additional 5 minutes to allow the top to crisp slightly.
  10. Garnish with fresh parsley and sliced green onions, if desired. Serve hot directly from the skillet.

Notes

You can adjust the amount of honey and BBQ sauce to your preference. For a spicier kick, add a pinch of red pepper flakes.
