Irresistible Garlic Herb Chicken with Creamy Mashed Potatoes

Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potatoes
  • 2 lbs potatoes peeled and quartered
  • 1/2 cup milk warmed
  • 4 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Saucepan
  • Potato Masher

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the garlic herb mixture over them, ensuring they are evenly coated.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. While the chicken bakes, place the quartered potatoes in a saucepan and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until tender.
  6. Drain the potatoes and return them to the saucepan. Add butter, warmed milk, salt, and pepper.
  7. Mash the potatoes until smooth and creamy.
  8. Serve the garlic herb chicken with the creamy mashed potatoes.

Notes

You can add a splash of heavy cream to the mashed potatoes for extra richness.
