- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the garlic herb mixture over them, ensuring they are evenly coated.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken bakes, place the quartered potatoes in a saucepan and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until tender.
- Drain the potatoes and return them to the saucepan. Add butter, warmed milk, salt, and pepper.
- Mash the potatoes until smooth and creamy.
- Serve the garlic herb chicken with the creamy mashed potatoes.

You can add a splash of heavy cream to the mashed potatoes for extra richness.
