Ingredients
  

For the Beef Bites
  • 3 pounds sirloin steak cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 Tablespoon vegetable oil you may need more
For the Slow Cooker
  • 1 small sweet onion thinly sliced
  • 3 cloves garlic thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce packet au jus gravy mix
  • 4 tablespoons unsalted butter thinly sliced

Method
 

  1. Place the sirloin steak pieces into a large bowl. Season with kosher salt and black pepper. Toss to combine.
  2. Heat a large skillet over medium-high heat. Add vegetable oil and heat until very hot. Brown the steak pieces in batches, just to give them color. Add more oil if needed.
  3. Add the seared steak to a 6-quart slow cooker. Add the sliced sweet onion and garlic. Stir gently.
  4. Pour in the beef stock. Sprinkle the au jus gravy mix evenly over the top. Arrange the butter slices over the mixture.
  5. Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours. Stir once an hour if possible.
  6. Serve the beef bites with mashed potatoes, egg noodles, or rice.
