For the Sweet Potatoes
  • 4.5 cups sweet potatoes, cubed about 1 1/2 pounds
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon cinnamon
For the Ground Beef
  • 1 pound lean ground beef
  • 1 Tablespoon tomato paste
  • 1 Tablespoon taco seasoning
For Assembly
  • 2 cups low-fat cottage cheese
  • 1 large avocado or 2 small
  • 4 Tablespoons hot honey

Method
 

  1. Preheat your oven to 425 degrees F.
  2. Add the cubed sweet potatoes to a large baking sheet. Spray with avocado oil.
  3. Add salt, pepper, and cinnamon. Mix to evenly coat the sweet potatoes.
  4. Roast the sweet potatoes for 30 minutes, flipping them halfway through.
  5. Meanwhile, cook the ground beef in a large skillet over medium-high heat with the taco seasoning and tomato paste.
  6. Assemble each bowl with roasted sweet potatoes, cooked ground beef, cottage cheese, avocado slices, and a drizzle of hot honey. Enjoy!
