Ingredients
  

For the Zucchini
  • 2 medium zucchini trimmed and sliced lengthwise into 1/4-inch thick planks
For the Marinade
  • 3 tablespoons olive oil
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper to make the marinade.
  3. Place the zucchini planks in the bowl and toss to coat them evenly with the marinade.
  4. Grill the zucchini for about 4-5 minutes per side, or until tender and grill marks appear.
  5. Remove from grill and serve immediately.

Notes

You can also add other herbs like dried oregano or basil to the marinade for extra flavor.
