Ingredients
  

For the Skewers
  • 1 medium watermelon seedless, cut into 1-inch cubes
  • 8 oz halloumi cheese cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp fresh mint chopped
  • 1 tbsp balsamic glaze for drizzling
  • 1/2 tsp black pepper freshly ground

Method
 

  1. In a bowl, combine the watermelon cubes and halloumi cubes. Drizzle with olive oil and sprinkle with chopped mint and black pepper. Gently toss to coat.
  2. Let the mixture marinate for at least 5 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated watermelon and halloumi cubes onto skewers, alternating between the two.
  5. Grill the skewers for about 3-4 minutes per side, or until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
  6. Remove skewers from the grill. Drizzle with balsamic glaze before serving.

Notes

You can add other ingredients like red onion or cherry tomatoes to the skewers. This dish is best served immediately after grilling.
