Grilled Portobello Mushrooms

Ingredients
  

For the Mushrooms
  • 4 large portobello mushrooms stems removed, gills scraped
For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper to make the marinade.
  3. Place the prepared portobello mushrooms in a single layer on a baking sheet or in a shallow dish. Pour the marinade over the mushrooms, ensuring they are coated on both sides.
  4. Let the mushrooms marinate for at least 10 minutes while the grill heats up.
  5. Place the marinated mushrooms gill-side down on the preheated grill.
  6. Grill for 7-10 minutes per side, or until tender and slightly charred. Baste with any remaining marinade during the last few minutes of cooking.
  7. Remove from grill and serve immediately.

Notes

You can serve these grilled portobellos as a side dish, on a bun as a vegetarian burger, or as a topping for salads.
