Method
- Preheat your grill to medium-high heat.
- Lightly brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
- Remove peaches from the grill and let them cool for about 5 minutes. Once cooled, slice the peaches.
- In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper for the dressing.
- In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
- Add the sliced grilled peaches to the salad. Drizzle with the honey dressing and toss gently to combine.
- Serve immediately.
