Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz mixed greens
  • 1/4 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
  3. Remove peaches from the grill and let them cool for about 5 minutes. Once cooled, slice the peaches.
  4. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper for the dressing.
  5. In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
  6. Add the sliced grilled peaches to the salad. Drizzle with the honey dressing and toss gently to combine.
  7. Serve immediately.

Notes

You can add other ingredients like red onion slices or grilled chicken for a more substantial meal.
