Grilled Corn on the Cob

Ingredients
  

For the Corn
  • 4 ears of corn husks on
For the Topping
  • 4 tablespoons unsalted butter softened
  • 1 tablespoon fresh cilantro chopped
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Peel back the husks of the corn, but do not remove them. Remove the silk from the corn. Pull the husks back up to cover the corn.
  3. Soak the corn in water for about 10 minutes. This helps the husks steam the corn.
  4. Place the corn directly on the preheated grill grates. Grill for about 12-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
  5. While the corn is grilling, mix together the softened butter, chopped cilantro, lime zest, chili powder, salt, and pepper in a small bowl.
  6. Once the corn is cooked, carefully remove it from the grill. Pull back the husks. Spread the flavored butter mixture over the hot corn.
  7. Serve immediately.

Notes

You can also grill corn in the husk without soaking, but it may cook faster and the husks can char more.
