- Preheat your grill to medium-high heat.
- Peel back the husks of the corn, but do not remove them. Remove the silk from the corn. Pull the husks back up to cover the corn.
- Soak the corn in water for about 10 minutes. This helps the husks steam the corn.
- Place the corn directly on the preheated grill grates. Grill for about 12-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
- While the corn is grilling, mix together the softened butter, chopped cilantro, lime zest, chili powder, salt, and pepper in a small bowl.
- Once the corn is cooked, carefully remove it from the grill. Pull back the husks. Spread the flavored butter mixture over the hot corn.
- Serve immediately.
Notes
You can also grill corn in the husk without soaking, but it may cook faster and the husks can char more.
