Method
- Preheat your grill to medium-high heat.
- Toss chicken breasts with olive oil, salt, and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
- While chicken is grilling, prepare the dressing. In a small bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, minced garlic, olive oil, salt, and pepper.
- Assemble the bowls. Divide chopped romaine lettuce among four bowls.
- Top the lettuce with sliced grilled chicken, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, crumbled blue cheese, and sliced red onion.
- Drizzle with the prepared dressing just before serving.
Notes
For a lighter dressing, you can substitute Greek yogurt for some of the mayonnaise.
