Grilled Chicken Cobb Bowls

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Salad
  • 6 cups romaine lettuce chopped
  • 2 hard-boiled eggs chopped
  • 4 strips bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1/2 cup blue cheese crumbled
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 1/3 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Equipment

Method
 

  1. Preheat your grill to medium-high heat.
  2. Toss chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
  4. While chicken is grilling, prepare the dressing. In a small bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, minced garlic, olive oil, salt, and pepper.
  5. Assemble the bowls. Divide chopped romaine lettuce among four bowls.
  6. Top the lettuce with sliced grilled chicken, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, crumbled blue cheese, and sliced red onion.
  7. Drizzle with the prepared dressing just before serving.

Notes

For a lighter dressing, you can substitute Greek yogurt for some of the mayonnaise.
