- Toss the potatoes with 1 tablespoon of olive oil, salt, and pepper. Set aside.
- Pat the steak bites dry with paper towels. Season with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until tender and browned.
- Push the potatoes to one side of the skillet. Add the steak bites to the empty side and sear for 2-3 minutes per side, until browned.
- Add the minced garlic to the skillet and cook for 1 minute until fragrant, stirring to combine with the steak and potatoes.
- Remove the skillet from heat. Let the steak rest for 10 minutes before serving.
- Garnish with fresh parsley, if desired.

You can adjust the cooking time for the potatoes and steak to your preference. For a crispier potato, you can roast them in the oven before adding them to the skillet.
