Ingredients
  

For the Steaks and Potatoes
  • 2-4 petite steaks about 1 inch thick, 4-6 inches long
  • to taste salt
  • to taste pepper
  • to taste garlic powder
  • 1 tablespoon olive oil
  • 2-4 pounds baby potatoes diced
For the Garlic Butter
  • 2-6 tablespoons salted butter softened, one tablespoon per steak, plus two tablespoons for the potatoes
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herb blend
For Garnish
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

Method
 

  1. Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Mix well and set aside.
  2. Season your steaks generously with salt, pepper, and garlic powder on both sides.
  3. Place a 12-inch oven-safe skillet over medium-high heat. Add the olive oil. Once the oil is shimmering, carefully place the seasoned steaks in the skillet. Sear for 2-3 minutes on each side until nicely browned. Remove the steaks from the skillet and set them aside on a plate.
  4. Add the diced baby potatoes to the same skillet. Season them with salt, pepper, and garlic powder. Sauté the potatoes for 3-5 minutes until they begin to brown. Push the potatoes to one side of the skillet and return the seared steaks to the other side.
  5. Transfer the skillet to the preheated oven. Cook for 15-20 minutes, or until the potatoes are fork-tender and the steak is cooked to your desired doneness.
  6. Once removed from the oven, place a dollop of the prepared garlic butter mixture on top of each steak and distribute the remaining butter over the potatoes. Allow the butter to melt for a minute. Stir the potatoes to coat them evenly in the melted butter. Sprinkle with fresh thyme and parsley before serving.

Notes

Any oven-safe skillet will work for this recipe. A cast-iron pan is highly recommended for achieving an excellent sear on the steak. When selecting steaks, look for cuts that are about 1 inch thick and small enough to fit comfortably in a 12-inch skillet alongside the potatoes. Avoid very thin cuts, as they can overcook quickly.
