- Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Mix well and set aside.
- Season your steaks generously with salt, pepper, and garlic powder on both sides.
- Place a 12-inch oven-safe skillet over medium-high heat. Add the olive oil. Once the oil is shimmering, carefully place the seasoned steaks in the skillet. Sear for 2-3 minutes on each side until nicely browned. Remove the steaks from the skillet and set them aside on a plate.
- Add the diced baby potatoes to the same skillet. Season them with salt, pepper, and garlic powder. Sauté the potatoes for 3-5 minutes until they begin to brown. Push the potatoes to one side of the skillet and return the seared steaks to the other side.
- Transfer the skillet to the preheated oven. Cook for 15-20 minutes, or until the potatoes are fork-tender and the steak is cooked to your desired doneness.
- Once removed from the oven, place a dollop of the prepared garlic butter mixture on top of each steak and distribute the remaining butter over the potatoes. Allow the butter to melt for a minute. Stir the potatoes to coat them evenly in the melted butter. Sprinkle with fresh thyme and parsley before serving.

Notes
Any oven-safe skillet will work for this recipe. A cast-iron pan is highly recommended for achieving an excellent sear on the steak. When selecting steaks, look for cuts that are about 1 inch thick and small enough to fit comfortably in a 12-inch skillet alongside the potatoes. Avoid very thin cuts, as they can overcook quickly.
