Ingredients
  

Salad
  • 1 large cucumber peeled, seeded, and chopped
  • 2 cups cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 4 ounces feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the chopped cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and chopped parsley.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

This salad can be made ahead of time. For best results, add the dressing just before serving to keep the vegetables crisp.
