Cucumber Agua Fresca

Ingredients
  

For the Agua Fresca
  • 1 medium cucumber peeled and roughly chopped
  • 2 cups watermelon cubed and seeded
  • 1/4 cup fresh lime juice from about 2 limes
  • 2-4 tablespoons sugar or to taste
  • 4 cups water plus more if needed
  • 1 pinch salt optional
For Serving
  • 1 cup ice cubes
  • 1 small cucumber thinly sliced, for garnish

Equipment

  • Blender
  • Fine-mesh sieve
  • Pitcher

Method
 

  1. Combine the chopped cucumber, cubed watermelon, lime juice, sugar, and 4 cups of water in a blender.
  2. Blend until smooth. If the mixture is too thick, add more water, a quarter cup at a time, until you reach your desired consistency.
  3. Pour the mixture through a fine-mesh sieve set over a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
  4. Stir in the optional salt, if using. Taste and add more sugar if needed.
  5. Chill in the refrigerator for at least 30 minutes, or until cold.
  6. To serve, fill glasses with ice. Pour the agua fresca over the ice and garnish with lime slices and cucumber slices.

Notes

You can adjust the sweetness by adding more or less sugar. For a less sweet drink, omit the sugar entirely.
