Crock Pot Creamy Cajun Chicken Pasta

Ingredients
  

For the Pasta
  • 1 pound boneless skinless chicken breasts cut into 1-inch pieces
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1/2 yellow onion thinly sliced
  • 4 cloves garlic chopped
  • 3/4 cup coconut milk
  • 1/2 cup low sodium chicken broth
  • 1 14.5 ounce can crushed tomatoes
  • 1 tablespoon cajun seasoning
  • 2 teaspoons smoked paprika
  • 1 teaspoon kosher salt
  • 8 ounces uncooked penne pasta
  • 1 cup freshly grated parmesan cheese plus more for garnish
  • Chopped parsley for garnish

Method
 

  1. Add the chicken, bell peppers, onion, and garlic to your slow cooker.
  2. In a mixing bowl, whisk together the coconut milk, chicken broth, crushed tomatoes, cajun seasoning, smoked paprika, and salt. Pour this mixture over the ingredients in the slow cooker and stir to combine.
  3. Cover the slow cooker and cook on high for 1 ½ hours or on low for 3-4 hours.
  4. Remove the lid and add the uncooked penne pasta. Stir to incorporate the pasta, ensuring it is mostly covered by the liquid. Cover and cook for an additional 30-40 minutes, stirring occasionally, until the pasta is al dente.
  5. Stir in the grated parmesan cheese until melted. Keep warm until ready to serve. Note that the pasta will continue to cook while being kept warm.
  6. Garnish with extra parmesan cheese and chopped parsley before serving.

Notes

Pasta will continue to cook if left in the slow cooker. Serve immediately or remove from the slow cooker once finished to prevent mushy pasta. If cooking on low, turn the heat up to high before adding the pasta. Pasta cooking times can vary based on your slow cooker. This dish is not recommended for freezing as the pasta may become mushy upon reheating.
