- Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the orzo pasta and toast for 1-2 minutes, stirring constantly.
- Pour in the chicken broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed, stirring occasionally.
- Stir in the heavy cream and grated Parmesan cheese. Return the cooked chicken sausage to the skillet. Add the fresh spinach and stir until wilted.
- Season with salt and pepper to taste. Serve immediately.
Notes
You can add other vegetables like bell peppers or mushrooms along with the onion. For a spicier dish, add a pinch of red pepper flakes.
