Ingredients

For the Orzo
  • 1 tablespoon Olive oil
  • 1 pound Chicken sausage sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Orzo pasta
  • 3 cups Chicken broth
  • 1/2 cup Heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1 cup Spinach fresh
  • to taste Salt
  • to taste Black pepper

Equipment

  • Large skillet
  • Knife
  • Cutting board

Method

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the orzo pasta and toast for 1-2 minutes, stirring constantly.
  4. Pour in the chicken broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed, stirring occasionally.
  5. Stir in the heavy cream and grated Parmesan cheese. Return the cooked chicken sausage to the skillet. Add the fresh spinach and stir until wilted.
  6. Season with salt and pepper to taste. Serve immediately.

Notes

You can add other vegetables like bell peppers or mushrooms along with the onion. For a spicier dish, add a pinch of red pepper flakes.
