Chicken Avocado Melt Sandwich

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts slice each crosswise to create 4 thin breasts
  • 1 tbsp olive oil
  • to taste salt
  • to taste pepper
For the Chipotle Mayonnaise
  • 1 cup mayonnaise
  • 2 chipotle chili peppers in adobo sauce diced
  • 1/2 tsp lime juice
  • to taste salt
  • to taste pepper
For the Sandwich
  • 1 loaf unsliced Italian or other white bread slice into 8 thick slices (about 1/2 inch)
  • 2 avocados peeled, pitted and sliced
  • 2 cups sharp cheddar cheese grated
  • 8 slices American cheese
  • for grilling butter or mayonnaise

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Slice each chicken breast crosswise to create two thinner cutlets. You should have four thin chicken cutlets in total. Place the chicken in a glass baking dish, season with salt and pepper, and drizzle with olive oil. Roast for 20-25 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
  2. Dice the chipotle peppers. In a small bowl, combine the mayonnaise, lime juice, and diced chipotle peppers. Season with salt and pepper. Set aside.
  3. Heat a griddle or skillet over medium heat. Slice the bread into 8 thick slices, about 1/2 inch thick. Spread one side of each bread slice with softened butter or mayonnaise.
  4. Assemble the sandwiches: Spread the chipotle mayonnaise onto the unbuttered side of four bread slices. Layer with grated cheddar cheese, sliced avocados, cooked chicken, and two slices of American cheese. Top with the remaining bread slices, buttered side up.
  5. Grill the sandwiches on the preheated griddle or skillet for 3-4 minutes per side, or until golden brown and the cheese is melted.
