BBQ Pineapple Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the BBQ Pineapple Glaze
  • 1 cup pineapple juice
  • 1/2 cup BBQ sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Equipment

  • Basting brush
  • Small saucepan

Method
 

  1. Prepare the BBQ pineapple glaze. In a small saucepan, combine pineapple juice, BBQ sauce, brown sugar, soy sauce, Worcestershire sauce, and garlic powder. Bring to a simmer over medium heat, stirring occasionally. Cook for 5-7 minutes, or until slightly thickened. Remove from heat.
  2. Preheat your grill to medium-high heat.
  3. Pat the chicken breasts dry with paper towels. Brush them with olive oil and season with salt and pepper.
  4. Grill the chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  5. During the last 5 minutes of grilling, brush the chicken generously with the BBQ pineapple glaze. Continue to grill, turning once, until the glaze is caramelized.
  6. Remove chicken from the grill and let it rest for a few minutes before serving.

Notes

Serve with your favorite summer sides like grilled corn on the cob or a fresh salad.
