Method
 

  1. Season the sirloin steak with chili powder, cumin, garlic salt, and black pepper. Drizzle with vegetable oil and the juice from half the lime.
  2. Heat a skillet over medium-high heat. Sear the steak for 3-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
  3. While the steak rests, spread refried beans on the bottom half of each toasted roll. Top with mayonnaise.
  4. Layer the sliced steak over the mayonnaise. Add shredded Monterey Jack cheese, sliced tomatoes, and shredded lettuce.
  5. Add optional toppings like avocado, red onions, jalapeños, and hot sauce. Place the top half of the roll on top.
