- Season the sirloin steak with chili powder, cumin, garlic salt, and black pepper. Drizzle with vegetable oil and the juice from half the lime.
- Heat a skillet over medium-high heat. Sear the steak for 3-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
- While the steak rests, spread refried beans on the bottom half of each toasted roll. Top with mayonnaise.
- Layer the sliced steak over the mayonnaise. Add shredded Monterey Jack cheese, sliced tomatoes, and shredded lettuce.
- Add optional toppings like avocado, red onions, jalapeños, and hot sauce. Place the top half of the roll on top.
