- Preheat your air fryer to 370°F (188°C).
- In a mixing bowl, combine the avocado oil, lemon juice, lemon zest, dried parsley, smoked paprika, salt, black pepper, and minced garlic. Whisk everything together until well combined.
- Add the chicken breasts to the bowl with the marinade. Turn the chicken to ensure it is fully coated. Let the chicken marinate while the air fryer finishes preheating.
- Lightly spray the basket of your air fryer with nonstick cooking spray. Place the marinated chicken breasts in the basket, ensuring there is space between each piece for air circulation.
- Cook for 10 minutes. Then, open the air fryer, flip the chicken breasts over, and continue cooking for another 5-7 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a thermometer.
- Remove the chicken from the air fryer and place it on a plate. Tent the chicken loosely with aluminum foil and let it rest for 5-7 minutes. This allows the juices to redistribute and the chicken to finish cooking to an internal temperature of 165°F (74°C).
- Serve the chicken garnished with fresh parsley, and a lemon wedge for squeezing over the top.
